Mark,
I'd use HIR=1/EF and then zero out the tank losses by entering Tank UA=0.

I have a 6kw 40 gal electric DHW. The EF per 90.1 Table 7.8 is 0.87 (is that right?). What should I input for the EIR? The inverse of the EF? I'm better at moving air than electrons...
