The tutorial pages:
http://energyplustutorial.googlepages.com/
are good for the concept but they are very out of date (pre V3.0, we're now at V4.0).
The Getting Started document will explain some of the background and then has 3 sets of tutorials to work through.
I'd suggest starting there.
If you haven't, also upgrade to V4.0 to have a fresh start.
