Check the datasets folder for a file called ASHRAE_2005_HOF_Materials.idf.  Should be like:

C:\ <Install Directory> \DataSets\ASHRAE_2005_HOF_Materials.idf

Has tons of materials and construction examples.

EnergyPlus Documentation is searchable.  Open EPlusMainMenu.pdf under the Documentation link and press the "search" button.
