The way WUFI calculates is to divide each material in a wall
assembly into a number of sub layers (cells) and at each time step it
calculates a heat and moisture balance of all the cells in the wall assembly.
Apparently, EnergyPlus allows you to output the individual cell data which
would allow you to look at a temperature/moisture profile of the wall. You need
RH and moisture content because 100% RH does not always mean the material is
fully saturated. You may need to check the reference to find it, but there
should be surface heat and moisture fluxes as well. Ned
