Look at the Auxiliary Programs guide that comes with EnergyPlus. In the Weather Converter Program section, the EPW file format and fields are discussed. It talks about the fields that are currently in use by EnergyPlus.
As for historic weather data, this is the official webpage for EPW Weather data:
