There is no direct way to simulate this.  You need to gather the operating
parameters of each chiller and create one chiller and custom performance
curves to approximate the operation of the two series chillers.  If one
chiller goes down at night or during certain conditions you could use a
second chiller and equipment schedules to simulate this.  Good luck.
