You can report variables at whatever frequency you desire, daily, monthly, hourly, timestep, etc.  These are defined in your 'Output:Variable,*,*,Frequency' definitions.  There's not necessarily an easy way to view these while a simulation is running, but once the simulation is complete, you can see how the temperatures changed through that simulation.
