Simply declare a zone with heat transfer surfaces and do nothing else. Do not add infiltration, ventilation, or HVAC equipment. Do not use it as an air mixer from other zones.
In the real life, it is still there to conduct heat from the other zones. This is simulated in EPlus.
Assign material and construction just as a normal zone, with walls, floor and ceiling.
