Thanks for your replies.
I went with the waterheater:mixed, because the water temperature out is equal to the tank water temperature (only using the source side nodes), so it's exactly like an in-line buffer tank of the required volume.
Increasing the volume of the loop would give the same end-result (if you're not looking at temperatures at a specific point), so definitely offers a more easily implemented solution.
