There are a few ways you can go about this. If you want to go the HVAC setpoint route, use the object
ThermostatSetpoint:SingleHeatingOrCooling
which allows you to just schedule the setpoint throughout the year according to your recorded data.
Or... you could play the energy management system (EMS) functions of energyplus that allows you to assign external data to nodes in your model.
Both are things to consider.
