The definition of the EPW data is in the auxiliary programs documentation. It documents which data are used by EnergyPlus ... as Joe describes below. There are many data fields in the EPW but not all are currently used by EnergyPlus

However, I want to expand a little on the raw data that's needed to create a usable
weather file. In addition to being hourly, you need to make sure that you have at the
minimum some indication of the following four key climatic variables: temperature,
humidity, wind speed, and solar radiation. Wind direction is also important if you're
trying to study natural ventilation. Barometric pressure would be nice, but not
essential. Ideally, you should have two solar values - total global horizontal and direct
normal (beam) radiation - but you'll be lucky just to have the former (global
horizontal), since solar radiation is not something included in standard weather reports.
If you only have global horizontal,
the direct normal can be calculated by the WeatherConverter program, but make sure that
you use Version 8 or later, since there was a mistake in previous versions in this
calculation. If you don't have any solar radiation, you would then need information on
Cloud Cover, i.e., the amount of the sky covered by clouds, which WeatherConverter would
use to calculate the global horizontal, or otherwise you'll get a file always with clear
day radiation.
