I don't think EnergyPlus is the right program for simulating an underground building. The SLAB program is meant to simulate heat flows through building foundations near the surface, and the connection between SLAB and EnergyPlus is weak, i.e., SLAB is a preprocessor program that's used before EnergyPlus, so there's no feedback from EnergyPlus back to SLAB. I would suggest that you contact Prof. Moncef Krarti at the Univ. of Colorado (mkrarti@xxxxxxxxxxxx), who has done a lot of work on simulating underground heat flows and is the author of the ITPE (Interzone Temperature Profile Estimation) method described in the ASHRAE Handbook of Fundamentals. Prof. Krarti is also very familiar with EnergyPlus, so he might suggest the best way to use EP for your problem.
