no, but it must be convex.

Many roof surfaces have four vertices but are not a
rectangle, especially hip-type roofs. Do I have to
break these surfaces down to two triangles?

no.

The documentation states, "window subsurfaces can be
rectangular or triangular."

WINDOWS should be rectangular as should Glass Doors but normal heat transfer surfaces do not have to be.
