Our philosophy (backed by studies) on this has always been
simplify geometry.  We describe some of that in the Getting Started
manual -- the Adult Education Center example.  (which talks more
about reducing number of zones than surfaces, but concept is
extensible)

As to volumes, you can enter the proper volumes in the Zone object. 
That will override any calculation done using the surfaces.
