You can get sensible, latent and total from output variables.  Possibly you need to turn on your output variable dictionary so that after you run your file all of the dropdown outputs available for your file become available in the output variable or meter section. 

However--- this is not what I recommend for your use----- 

What I do recommend is that you take a look at the file ending with Zsz.csv
This file will give you the minute by minute load shape used in the sizing as well as the peak. It provides both flow rates and sensible cooling capacity and can be used to check both peak and off peak loads for peak shifting strategies.
