Have you posted your IDF to the group?
In the original example, the collector has a low temperature turn off. When there is ni sun, the temperature is low, and the system shut off by turning off the pump.
There are two tanks connected in series. The water is provided by the domestic main. The water does not flow when there is no demand.
The second tank is heated by electricity, in the example. This heater is the one you wanted to change. This heater is controlled by monitoring the outlet temperature of the second tank. The same temperature would also turns off the solar system.
In practice, the DHW supply temperature is always higher than the user set temperature, and lower than the building heating temperature. The example also you how to mix the tank water and the main water to get a lower temperature.
Try not to change the setpoint manager types, and change the temperature values to what you want. Then change the plant heater equipment from electricity to gas. This may not be simple if you do not work with EPlus IDF directly. This is why I wanted to see how you change the IDF.
