Appendix G is not a compliance path for ASHRAE 90.1 (See chapter 4 and G1.1). It is intended as a method to rate energy efficient buildings going beyond the requirements of 90.1.
Using the rules in appendix G, you can show how efficient your building is compared to a baseline building (also following rules in app. G) that complies with 90.1 by modeling both buildings. So, your proposed building should follow the assemblies and insulation levels indicated on the building drawings.
The tables in Chapter 5 are for buildings following one of the paths for compliance with 90.1. Again, see chapter 4 for compliance paths.

Proposed building can use ANY:
shown in Tables 5.5-1 through 5.5-8, with typical detailed constructions listed in appendix A (or recommend proposed building using these constructions even though the use of constructions for proposed design can be arbitrary, as the Standard states "All components of the building envelope in the proposed design shall be modeled as shown on architectural drawings or as built for existing building envelopes.").
