I tried to simulate my DHW as you advised: I replaced the WaterHeater:Mixed by a WaterHeater:Stratified.
Ok, now the tank itself acts more efficient but still: the tempering valve cools the water of the tank down. But I found another way. I replaced my Tank by an HeatExchanger:FluidToFluid. This component has a lot of control modes that is capable to regulate the mass flow in an energy efficient way.
