If you fill in a certain water flow (m³/s), and Energyplus decides to split the surface in several parallel surfaces, the flow will be divide by the amount of split surfaces.
The water speed will decrease indeed, and the pressure drop will decrease, which will influence the pump energy consumption. I suppose I this must be visible somewhere in the output?

That's not entirely true. Instead of one long circuit you have many short circuits in parallel. This changes flow velocities inside of the pipes which effect heat transfer rates and would effect pressure drops that need to be met by the pump. As I always mention, the limiting effect is more often the area of the cooled componant.
EnergyPlus calculates all the effects even if some of them have next to no net effect under normal circumstances.
